Garlic Mojo- Mojo de Ajo

This is one of those condiments that you can out on anything. If you love garlic, then you will love this Mojo. It is very common in Caribbean cuisine to finish off meats, and root vegetables with this Garlic Mojo. It is also the perfect compliment to Plantain and Casava Chips.

Ingredients

3 Cloves of Garlic
3/4 of a cup Olive Oil- Goya Olive Oil is delicious in this recipe. It has a wonderful fruity flavor.
1/2 Tsp. to a Tsp. of Salt & Pepper

Preparation

Finely chop the three cloves of garlic. Once the garlic is finely chopped, add it the olive oil and then add the salt and pepper to the mixture.

Let the mixture sit for at least half hour for the flavors to meld together.

** if you prefer the flavor of roasted garlic, you can go ahead and roast your garlic and then add to the olive oil.
